Soft spiced fruit bread (Print Version)

# Ingredients:

01 - 100 g whole almonds.
02 - 200 g dried fruits (prunes, apricots, raisins).
03 - 250 g all-purpose flour.
04 - 1 tsp mixed spice.
05 - 100 ml milk.
06 - A dash of vanilla extract.
07 - 2 eggs.
08 - 1 pack baking powder.
09 - 80 g brown sugar.
10 - 100 g melted butter.
11 - A small pinch of salt.
12 - 1 tsp cinnamon.

# Instructions:

01 - Chop prunes and apricots roughly. Toss together with the almonds and raisins.
02 - Combine flour, baking powder, spices, sugar, and salt. Gradually stir in eggs, milk, butter, and vanilla till smooth.
03 - Gently fold the dried fruit and almond mix into the batter.
04 - Pour the mixture into a greased loaf tin. Bake at 180°C for 45-50 minutes. When done, a knife inserted should come out clean.
05 - Allow it to cool fully before taking out of the tin. Tastes even better after a day of resting!
