Spiced Cake Michalak (Print Version)

# Ingredients:

01 - 150 g of honey.
02 - 150 g of water.
03 - 1 pinch of salt.
04 - 6 g of star anise (badiane).
05 - 25 g of raw sugar.
06 - Zest from one lemon.
07 - Zests from 2 limes.
08 - Zest from an orange.
09 - 4 g of spice mix for gingerbread.
10 - 150 g of all-purpose flour.
11 - 100 g of butter.
12 - 5 g of baking powder.

# Instructions:

01 - Add water, honey, sugar, salt, spice blend, citrus zests, star anise, and butter to a pot. Heat it up until it boils, then cover and let the flavors soak together for 25 minutes.
02 - Take a large bowl and combine the flour with the baking powder. Strain the infused mixture over the flour, then whisk until it turns into a smooth batter.
03 - Pour the batter into a greased and floured loaf pan. Bake in an oven preheated to 180°C for about 25 minutes.
04 - Let it cool slightly before taking it out of the pan. Wrap it in plastic wrap and let it cool completely. Optionally, brush it with blond glaze for shine.
