Soft Pretzel Bites (Print Version)

# Ingredients:

→ Dough Base

01 - 1½ cups of warm water or milk (heated to 110-115°F)
02 - 1 tablespoon of brown sugar
03 - 1 packet (0.25 ounces) of active dry yeast
04 - 4½ cups of all-purpose flour (add more if necessary)
05 - 2 tablespoons of melted butter (plus more for brushing)
06 - 1 teaspoon of fine sea salt

→ Boiling Solution

07 - 9 cups of water
08 - ⅓ cup of baking soda

→ Topping

09 - 1 large egg (whisked with a tablespoon of water)
10 - Sprinkle coarse sea salt or pretzel salt

# Instructions:

01 - Combine warm sugar water and milk in a big bowl, sprinkle yeast on top, and let it foam up for 5 minutes.
02 - Mix in flour, salt, and melted butter. Knead it for about 4 minutes by hand or use a dough hook until smooth. If it’s sticky, add a bit more flour.
03 - Put the dough in an oiled bowl, cover with a damp cloth, and leave it alone for 20-30 minutes to double in size.
04 - Set your oven to 450°F, cover baking sheets with parchment, and prepare the boiling water and soda solution.
05 - Cut your dough into 12 parts, roll each into ropes around ¾-inch thick, and cut into 1-inch chunks.
06 - Drop the dough bites into boiling water in small batches for 30 seconds each, then pop them onto lined pans.
07 - Brush bites with egg wash, sprinkle with salt, and bake in the oven for 12-14 minutes until golden brown.
08 - When warm, brush with more butter if you want and serve right away.

02 - You can choose water or milk for the dough.
