Fluffy soft blinis (Print Version)

# Ingredients:

01 - 30 g melted butter or a splash of vegetable oil.
02 - 1 teaspoon salt.
03 - 250 g warm milk.
04 - 3 large eggs.
05 - 250 g T55 flour.
06 - 1 teaspoon sugar.
07 - 15 g fresh yeast or 1 teaspoon instant yeast.

# Instructions:

01 - In a large bowl or blender, combine the warm milk, eggs, melted butter, yeast, and sugar. Stir everything thoroughly with a whisk, or blend it for 1-2 minutes.
02 - Toss in the flour and salt, then mix for about 3 minutes. You can use a hand blender if that's easier. The batter should come out smooth.
03 - Pour the batter into a large bowl, cover it with plastic wrap, and let it sit at room temperature for an hour.
04 - Heat a non-stick pan and lightly grease it with a pastry brush. Pour a small amount of batter, about the size of a tiny ladle. Cook on medium heat for 1-2 minutes, until bubbles appear on the surface. Flip it over and cook for another minute or until golden.
05 - Serve the blinis warm or cold. Top them with either sweet or savory toppings, whatever you prefer.

# Notes:

01 - Storage: Keep them in the fridge for 4-5 days in an airtight container after they’ve cooled down, or freeze for up to a month.
02 - Reheating: Use a toaster, a pan, or the microwave for 15 seconds to warm them up.
