In a large bowl or blender, combine the warm milk, eggs, melted butter, yeast, and sugar. Stir everything thoroughly with a whisk, or blend it for 1-2 minutes.

Toss in the flour and salt, then mix for about 3 minutes. You can use a hand blender if that's easier. The batter should come out smooth.

Pour the batter into a large bowl, cover it with plastic wrap, and let it sit at room temperature for an hour.

Heat a non-stick pan and lightly grease it with a pastry brush. Pour a small amount of batter, about the size of a tiny ladle. Cook on medium heat for 1-2 minutes, until bubbles appear on the surface. Flip it over and cook for another minute or until golden.

Serve the blinis warm or cold. Top them with either sweet or savory toppings, whatever you prefer.
