Smothered Chicken Style (Print Version)

# Ingredients:

01 - 2 big chicken breasts.
02 - A teaspoon of seasoned salt.
03 - Half a teaspoon of black pepper.
04 - 1 tablespoon of butter, with extra if needed.
05 - 1 medium onion, sliced into 1/4-inch rings.
06 - 8 ounces of button mushrooms, thinly sliced.
07 - 4 ounces of shredded Monterey Jack cheese.
08 - Salt for taste.

# Instructions:

01 - Slice chicken in half lengthwise. Cover with plastic wrap and pound flat. Sprinkle both sides with salt and pepper.
02 - Heat butter on low-medium heat. Toss in onions with a dash of salt. Cook for 3-4 minutes, then add mushrooms and cook until golden (another 3-4 mins). Take them out once done.
03 - Add more butter if needed. Cook the chicken for about 6-8 minutes on the first side. Flip it, then cook for an extra 3-4 minutes.
04 - Layer veggies on top, sprinkle with cheese, and let it melt. Serve right away.

# Notes:

01 - To avoid steaming the chicken, don't pack the pan full. You might need to cook in rounds. Make sure each breast is even in thickness for best results. Eat while the cheese is still gooey.
