Slice the pork tenderloins into thick rounds and lay them in the bottom of the slow cooker.

In a bowl, combine the soy sauce, maple syrup, rice vinegar, garlic, onion, ginger, and some black pepper. Pour this over the pork.

Put the lid on and cook on low heat for 8 to 10 hours.

Remove the pork and shred it with forks. Heat the sauce in a pan until it boils. Mix the cornstarch with cold water, then stir it into the bubbling sauce. Keep stirring until it thickens.

Pour the sauce over the pulled pork. Serve it right away, or keep it warm in the slow cooker.
