Skillet Cranberry Chicken (Print Version)

# Ingredients:

01 - 5-6 chicken thighs with skin and bones left on.
02 - 1 tbsp of olive oil.
03 - 1/2 tsp pepper.
04 - 1/2 tsp salt.
05 - 2 minced garlic cloves.
06 - 1/3 cup diced shallot (1 large).
07 - 2/3 cup of fresh orange juice.
08 - 1 tablespoon zest from an orange.
09 - 1 cup of stock made from chicken.
10 - 1 1/2 tbsp honey.
11 - 1 tbsp of cider vinegar.
12 - 1 cup of cranberries, save 2 tbsp for topping.
13 - Thin slices of half an orange.

# Instructions:

01 - Set oven to 400°F. Sprinkle chicken generously with some salt and pepper.
02 - In a hot oiled pan, cook chicken till golden, 4-5 minutes each side. Take them out to rest.
03 - Sauté garlic and shallots for about 4-5 minutes. Pour in liquids, toss in cranberries with honey, and let it bubble for 8-10 minutes until thickens.
04 - Pop chicken back into the skillet with orange slices and leftover cranberries. Bake 15-20 minutes till chicken hits 165°F inside.

# Notes:

01 - A skillet that can go in the oven is a must.
02 - Go for fresh cranberries, they taste better.
03 - Maple syrup can stand in for honey if needed.
