Seafood Bisque Crab Shrimp (Print Version)

# Ingredients:

→ Seafood Essentials

01 - 8 ounces of juicy cooked shrimp, chopped into small chunks
02 - 8 ounces of fresh crab meat, carefully checked for shells

→ Creamy Goodness

03 - 4 tablespoons butter, unsalted
04 - ⅓ cup of finely diced celery for that crunch
05 - ⅓ cup of freshly chopped green onions
06 - 1 ½ cups of heavy cream for richness
07 - 2 cups of whole milk
08 - 3 tablespoons of plain all-purpose flour
09 - 1 tablespoon of tomato paste - the concentrated kind

→ Flavors & Final Touches

10 - A pinch of sea salt and freshly cracked black pepper to taste
11 - 1 teaspoon of that classic Old Bay seasoning
12 - A handful of chopped flat-leaf parsley to garnish

# Instructions:

01 - In a saucepan with a thick base, melt the butter over medium heat. Toss in those green onions and celery once the butter's frothy. Stir until they're soft and smell amazing, but don’t let them brown.
02 - Add the flour, stirring it in nonstop for about a minute. At the same time, heat your milk in another pot or microwave so it's warm and ready.
03 - Slowly pour the warm milk while whisking vigorously to avoid lumps. Stir the heavy cream and mix in the tomato paste until smooth. Add Old Bay, salt, and pepper to taste.
04 - Lower the heat and let everything simmer gently until the soup thickens just enough to coat a spoon.
05 - Carefully fold in the chopped shrimp first, followed by the delicate crab meat. Heat just until it's warmed through. Garnish generously with parsley before serving.
