Scala Famous Salad (Print Version)

# Ingredients:

→ Dressing

01 - ⅓ cup of Pecorino Romano or Parmesan cheese, finely shredded
02 - 3 tablespoons red wine vinegar
03 - 3 teaspoons Dijon or dry mustard
04 - 2 garlic cloves, minced
05 - ½ teaspoon black pepper and kosher salt
06 - ⅓ cup high-quality olive oil

→ Salad

07 - A mix of 5-6 cups iceberg lettuce, shredded
08 - 4-5 cups romaine lettuce, finely chopped
09 - ¼ lb (4 oz) Italian salami, thin slices
10 - 2 full cups of mozzarella, shredded
11 - A 15-ounce can of chickpeas, drained and rinsed

# Instructions:

01 - Toss all the dressing components into a small bowl or jar. Either whisk until smooth or close the jar and shake really well.
02 - In a large salad bowl, combine the chickpeas, lettuce, mozzarella, and salami slices. Drizzle the dressing over everything, then toss gently.
03 - Enjoy this salad immediately while fresh. If saving for later, keep the dressing and salad separate in the fridge, and eat within a couple of days.
