Turn your oven on to 150°C to preheat it.

Cook the garlic and shallot in olive oil first. Then toss in the sliced mushrooms and cook until browned.

Whisk together the egg yolks, cream, and milk. Mix in the parmesan cheese and cooked mushrooms.

Pour the mix into ramekins and bake in a water bath for 40 minutes.

Let them chill in the fridge for 2 hours. Sprinkle some brown sugar on top and caramelize it before serving.
