Savory Mushroom Creams (Print Version)

# Ingredients:

01 - 250g of button mushrooms.
02 - 4 egg yolks.
03 - 200ml of thick cream.
04 - 50ml of milk.
05 - 30g of grated parmesan.
06 - 1 tablespoon olive oil.
07 - 1 minced shallot.
08 - 1 clove of garlic, chopped.
09 - Salt and pepper.
10 - Brown sugar to caramelize.

# Instructions:

01 - Turn your oven on to 150°C to preheat it.
02 - Cook the garlic and shallot in olive oil first. Then toss in the sliced mushrooms and cook until browned.
03 - Whisk together the egg yolks, cream, and milk. Mix in the parmesan cheese and cooked mushrooms.
04 - Pour the mix into ramekins and bake in a water bath for 40 minutes.
05 - Let them chill in the fridge for 2 hours. Sprinkle some brown sugar on top and caramelize it before serving.
