Tortellini Sausage Soup (Print Version)

# Ingredients:

01 - 1/2 medium onion, diced.
02 - 16 oz spicy or mild Italian sausage.
03 - 3/4 cup optional heavy cream.
04 - 2 celery sticks, chopped small.
05 - 28 oz can of crushed tomatoes.
06 - 4 minced garlic cloves.
07 - 2 carrots, sliced thin.
08 - 14 oz can diced tomatoes with juice.
09 - Salt and black pepper, adjust to taste.
10 - 4 cups chicken stock.
11 - 2 packages (9 oz each) fresh tortellini with cheese.
12 - 2 cups tightly packed baby spinach leaves.

# Instructions:

01 - Cook sausage and onion on medium heat (about 7-8 mins), breaking up sausage into bits. Drain fat if needed. Toss in garlic, stirring for 30 seconds before removing from the pan.
02 - Add the cooked sausage mixture, chopped celery and carrots, both tomato cans, and chicken broth into your slow cooker.
03 - On LOW, let it cook for 7-8 hours. For faster cooking, use HIGH for around 4-5 hours.
04 - Stir in the tortellini, spinach, and heavy cream. Switch to HIGH and let it simmer, stirring once in a while, before adjusting seasoning to your flavor preference.

# Notes:

01 - Chop the carrots into tiny pieces to speed up cooking time.
02 - Ground sausage works great, or just remove casings from whole sausages.
03 - Switch it up with spicy sausage if you like a kick.
04 - Add some broth when reheating leftovers since pasta can absorb liquid.
05 - Tastes best fresh, but still delicious next day.
