Spread a thick layer of garlic and herb cheese on one side of each bread slice.

Lay the smoked salmon on half of the bread slices. Top them with the plain bread slices, cheese side in. Sprinkle shredded cheese on top.

Melt butter in a pan and cook the sandwiches over medium heat. Flip after 3-4 minutes per side, or until golden and the cheese inside melts.

Enjoy them hot! Garnish with fresh dill if you'd like, and serve with a side salad.
