Golden Sweet Potatoes with Honey and Feta (Print Version)

# Ingredients:

01 - 3 big sweet potatoes.
02 - 3 tbsp of olive oil.
03 - Half a teaspoon of cinnamon.
04 - Half a teaspoon of paprika (smoked).
05 - 1/2 tsp cumin powder.
06 - 1/2 tsp coriander powder.
07 - A pinch of chili flakes.
08 - 1 tsp coarse salt.
09 - Half a teaspoon of black pepper.
10 - 1 tbsp regular or spicy honey.
11 - Feta cheese, crumbled (about 1/3 cup).
12 - Chopped parsley or chives for garnish.
13 - Extra honey to serve on the side.

# Instructions:

01 - Preheat your oven to 425°F, and scrub the sweet potatoes clean. Slice them into rounds about 1/3-inch thick.
02 - Grease your baking tray with oil, toss potato slices in olive oil, sprinkle with seasonings and drizzle with honey. Lay them out with some space between each piece.
03 - Pop them in the oven for 20 minutes, then turn them over and bake an extra 20-25 minutes until crispy and golden brown.
04 - Put the crispy potatoes on a plate, sprinkle with salt, spoon some honey over them, and top with feta cheese and herbs.

01 - Best to serve hot from the oven.
02 - Don't crowd the baking sheet so they crisp up nicely.
