Raspberry Cookies (Print Version)

# Ingredients:

01 - 1/4 cup melted white chocolate.
02 - 1/2 cup jam of your choice (like raspberry).
03 - 1/2 teaspoon vanilla.
04 - 2 cups plain all-purpose flour.
05 - 1/2 cup regular sugar.
06 - 1 cup softened unsalted butter.

# Instructions:

01 - Set oven to 350°F to heat up.
02 - Put parchment paper on the baking tray.
03 - Beat together sugar and butter until fluffy. Add vanilla, then slowly mix in the flour.
04 - Roll out dough to 1/4 inch thickness on a floured surface.
05 - Evenly coat with jam, but leave space along the edges.
06 - Shape into a log and chill in the fridge for 30 minutes.
07 - Cut the dough into 1/4 inch slices. Place them on the prepared tray.
08 - Bake for 12-15 minutes or until the edges turn golden. Let them cool on a rack.
09 - Drizzle melted white chocolate over the cooled cookies.

# Notes:

01 - Cold dough is easier to cut cleanly.
02 - Mix it up with any smooth jam you like.
03 - Leave space around the edges for easier rolling.
04 - Freeze the logs before drizzling for longer storage.
05 - A sharp knife works best for slicing.
