# Ingredients:

01 - 1 cup of low-fat cottage cheese (2%)
02 - 2 tablespoons sugar-free maple syrup (e.g., Lakanto)
03 - 1 teaspoon vanilla extract (pure)
04 - 1 1/2 cups almond flour (or treated all-purpose flour)

→ Protein & Chocolate Layer

05 - 1/4 cup protein powder, vanilla or choice of flavor
06 - 1 1/2 cups dark chocolate chips, sugar-free (like Lily's), split
07 - 1 teaspoon coconut oil

# Instructions:

01 - Blend the cottage cheese in your food processor or blender until it's fully creamy.
02 - Save 1 cup of the chocolate chips for later. In a bowl, stir the smooth cottage cheese with all the other listed ingredients until blended evenly.
03 - Place the dough mixture in the fridge for about 30 minutes to set and become easier to work with.
04 - Line a sheet with parchment paper. Scoop and roll the chilled dough into balls using a cookie scoop. Arrange them on the lined sheet, then freeze for at least 20 minutes.
05 - Melt the set-aside chocolate chips in the microwave in 15-second bursts, stirring to keep it smooth. Dip the frozen balls in the melted chocolate, then return to the parchment. Let them chill in the fridge until the chocolate hardens.
