Smoked Salmon Pancakes (Print Version)

# Ingredients:

→ For the toppings

01 - 1 pack of artisanal smoked salmon (Dan Fumoir)
02 - 1 tablespoon of freshly chopped dill
03 - 1 tablespoon of lemon juice
04 - 1/2 cup of cream cheese

→ For the röstis

05 - 2 peeled and shredded potatoes (2 cups)
06 - 2 eggs
07 - 1 tablespoon of olive oil
08 - Half a red onion

# Instructions:

01 - Mix the cream cheese, lemon juice, and chopped dill in a bowl. Put it to the side for later.
02 - Crack the eggs into a bowl and whisk them. Stir in the grated potatoes and chopped onion. Then, shape the mixture into eight patties.
03 - Heat olive oil in a frying pan over medium heat. Cook the patties for 5 to 7 minutes on each side, or until they're golden and soft inside.
04 - Spread the dill sauce on each rösti, then add slices of the smoked salmon on top.

# Notes:

01 - Eat immediately while they're still crispy
02 - For maximum crispiness, squeeze the water out of the shredded potatoes well
