Easy Lentil Soup (Print Version)

# Ingredients:

01 - 2 spoons of butter.
02 - 4 garlic cloves, minced.
03 - 1 small onion, diced.
04 - 2 large potatoes, peeled and chopped.
05 - 2 carrots, peeled and diced.
06 - 2 thin celery stalks, sliced.
07 - 2 cups of rinsed green lentils.
08 - 8 cups of stock (choose chicken or veggie).

# Instructions:

01 - Heat butter in a big pot. Add onion, garlic, potatoes, carrots, and celery. Stir for 5-6 minutes until they're softening.
02 - Toss in the lentils and stock. Season with salt and pepper. Bring it to a gentle simmer.
03 - Let it gently cook for 45 minutes. Stir every so often, so the veggies get tender.
04 - Want it less runny? Mix 2 spoons of cornflour with a splash of water, and stir it into the soup.

# Notes:

01 - Purée a little of it for a creamy texture.
02 - If you have time, soak lentils for 2 hours before.
03 - Boost the taste with thyme or bay leaves.
