Pork Stew with Beans (Print Version)

# Ingredients:

→ For the main dish

01 - 600g of pork stew meat
02 - 450g of frozen green beans
03 - 5 potatoes ideal for steaming
04 - 100g of diced smoked bacon pieces
05 - 4 spring onions
06 - A few sprigs of fresh thyme (approx. 3)
07 - Salt and pepper to taste
08 - Olive oil (only if needed)

# Instructions:

01 - Peel the potatoes, then cut them into chunky cubes. Trim and slice the spring onions thinly.
02 - Put the bacon in a large casserole dish (no oil needed). Add the spring onions and sauté everything until lightly browned, stirring often.
03 - Remove the browned bacon and onions and set them aside. Cook the pork pieces in the same dish, adding a splash of olive oil if the pan looks dry. Let the meat get some color.
04 - Put the potatoes, bacon, and onions back in the dish. Sprinkle salt, pepper, and the fresh thyme on top. Pour enough water to cover three-quarters of the meat, then simmer everything on low heat for an hour and ten minutes.
05 - Drop in the frozen green beans and let it all cook for another 30 minutes. Taste and tweak the seasoning if it needs it.
06 - Once cooked, let the dish cool. Store it in the fridge overnight for better flavor. Gently reheat it on low heat before serving.

01 - Best if made a day ahead for enhanced taste
02 - Choose potatoes that won’t fall apart while cooking
03 - Can be frozen after it’s cooked
