Chop the shallots. Preheat your oven to 200°C. Season the pork with salt and pepper.

Use a heavy pot to sear the pork on all sides in butter combined with olive oil. Set the meat aside.

Cook the shallots and bacon in the same pot until they start looking golden.

Put the meat back into the pot, pour in 50ml wine and 80ml water. Cover it and bake for 2 hours.

Take the juices, mix in the rest of the wine and water. Stir in Cognac with cornstarch until thickened.
