Pork Roast Country (Print Version)

# Ingredients:

01 - 6 large shallots.
02 - 200g smoked bacon bits.
03 - 30g olive oil.
04 - 60g butter.
05 - 1.6kg pork roast.
06 - 150ml dry white wine.
07 - 180ml water.
08 - 30ml Cognac.
09 - 1 tablespoon cornstarch.
10 - Salt and pepper.

# Instructions:

01 - Chop the shallots. Preheat your oven to 200°C. Season the pork with salt and pepper.
02 - Use a heavy pot to sear the pork on all sides in butter combined with olive oil. Set the meat aside.
03 - Cook the shallots and bacon in the same pot until they start looking golden.
04 - Put the meat back into the pot, pour in 50ml wine and 80ml water. Cover it and bake for 2 hours.
05 - Take the juices, mix in the rest of the wine and water. Stir in Cognac with cornstarch until thickened.

# Notes:

01 - Serve warm with potatoes.
02 - Sauce should be creamy.
