Peppermint Chewy Cookies (Print Version)

# Ingredients:

01 - 2 tablespoons light brown sugar.
02 - 1 teaspoon vanilla extract.
03 - 6 tablespoons crushed peppermint pieces.
04 - 1 large egg.
05 - 1 teaspoon peppermint extract.
06 - 1 cup + 2 tablespoons white granulated sugar.
07 - 1 cup unsalted butter, softened.
08 - 1 1/4 cups white chocolate chips.
09 - 2 3/4 cups plain flour.
10 - 1/2 teaspoon baking powder.
11 - 1 teaspoon baking soda.
12 - 1/2 teaspoon table salt.

# Instructions:

01 - Set your oven to heat up to 350°F. Cover the baking trays with paper, then mix all the dry bits (flour, soda, powder, salt).
02 - Beat the butter, white sugar, and brown sugar together till fluffy. Add in the egg and both flavorings, then stir in the dry mix till smooth.
03 - Gently mix in the peppermint bits and white chocolate chips so they're spread evenly.
04 - Shape the batter into balls, about 1½ tablespoons worth each. Pop them in the oven for 7-9 minutes until the sides just start to get golden.
05 - Leave on the baking tray for 4-5 minutes to cool a bit, then move them to a rack.

# Notes:

01 - Take care not to overcook them.
02 - Will stay nice for 4-5 days at room temperature.
03 - You can store them in the freezer for up to 3 months.
