Combine the flour, sugar, and salt in a bowl. Add the butter and use your fingers to mix until crumbly. Toss in the egg yolk, shape into a ball, wrap it in plastic wrap, and refrigerate for half an hour.

Get the fruit ready by slicing or cleaning them. Sprinkle with the sugar and cornstarch, or flour, and mix.

Mix the flour, brown sugar, and butter until you get a sandy texture. If you like, add in the almonds.

Roll out the dough and line a tart pan with it. Prick the base with a fork and spread the fruit mixture over it. Sprinkle the crumble mixture evenly across the top.

Bake it in an oven preheated to 180°C (around 350°F, gas mark 6) for 35-40 minutes.
