Savory Onion Pie (Print Version)

# Ingredients:

→ Pie Crust Base

01 - 1 sheet of puff or shortcrust pastry
02 - 3 large onions
03 - 150 g fresh goat cheese

→ Seasonings and Flavors

04 - 2 tablespoons olive oil
05 - 2 tablespoons runny honey
06 - 1 teaspoon dried thyme (or fresh thyme if you have it)
07 - Ground black pepper – adjust to your taste
08 - Salt – season however much you prefer

→ Optional Toppings

09 - A handful of arugula leaves

# Instructions:

01 - Get the oven up to 180°C (or gas mark 6).
02 - Peel the onions, then slice them into thin circles. Warm up olive oil in a pan over medium heat. Toss the onion slices in and let them cook slowly for 15 to 20 minutes.
03 - Stir in the thyme, salt, and pepper. Keep cooking the onions for a few more minutes to blend the flavors.
04 - Place the pastry sheet in a greased and floured tart pan. Using a fork, poke tiny holes across the bottom.
05 - Spread the cooked onions evenly across the pastry base. Crumble the goat cheese over the top.
06 - Slide the tart into the oven and bake until the pastry turns golden brown—this takes about 25 to 30 minutes.
07 - Take your creation out of the oven and brush with honey. If you’d like, sprinkle a few arugula leaves to garnish.

# Notes:

01 - Let the onions simmer gently to bring out their sweetness
02 - Spread both the cheese and onions out evenly
03 - Serve slightly warm for the best experience
04 - Great option with a side salad
