Get the oven up to 180°C (or gas mark 6).

Peel the onions, then slice them into thin circles. Warm up olive oil in a pan over medium heat. Toss the onion slices in and let them cook slowly for 15 to 20 minutes.

Stir in the thyme, salt, and pepper. Keep cooking the onions for a few more minutes to blend the flavors.

Place the pastry sheet in a greased and floured tart pan. Using a fork, poke tiny holes across the bottom.

Spread the cooked onions evenly across the pastry base. Crumble the goat cheese over the top.

Slide the tart into the oven and bake until the pastry turns golden brown—this takes about 25 to 30 minutes.

Take your creation out of the oven and brush with honey. If you’d like, sprinkle a few arugula leaves to garnish.
