Stir together sugar and peanut butter till it’s creamy.

Lay 30 crackers on a pan with parchment paper.

Spoon 2 tablespoons of peanut filling on each cracker.

Place another cracker on top and press down lightly.

Pop them into the freezer for about 15 to 20 minutes while you melt the chocolate.

Microwave chocolate—30 seconds, stir, repeat till fully melted.

Line another pan with new parchment paper.

Dip half the chilled cracker sandwiches in the chocolate, letting extra drip off.

Place on the lined pan and, if you’re using sprinkles, sprinkle them now.

Dip the rest, decorate, then chill them for 45 to 60 minutes until firm.
