Combine soft butter, cheese, mustard, and egg yolk. Toss in the salt, sugar, and flour, then knead everything into a dough.

Wrap the dough tightly in plastic wrap and pop it into the fridge for 2 hours.

Roll out the dough and cut it into rectangles about 5-6 cm long and 2-3 cm wide.

Bake at 190°C (fan setting) or 200°C for about 13-15 minutes until golden brown.
