Shred the potatoes and zucchini, then wrap them up in a tea towel. Squeeze out as much liquid as you can.

Grab a big bowl and toss in the flour, grated cheese, egg, olive oil, milk, and chopped parsley. Stir it all together.

Preheat your greased waffle iron so it’s ready to go.

Place 2 spoonfuls of the batter onto the waffle iron, add a slice of mozzarella on top, then put another layer of batter over it. Close the waffle maker and let them cook for 5-7 minutes.
