Savory Veggie Waffles (Print Version)

# Ingredients:

01 - Zucchini - 150 g
02 - Potatoes - 150 g

→ Dough Preparation

03 - Cheese (grated) - 40 g
04 - Milk - 100 ml
05 - Egg - 1 whole
06 - Flour - 60 g
07 - Olive oil - 2 tbsp
08 - Parsley - half a bunch
09 - Mozzarella - 1 ball

# Instructions:

01 - Shred the potatoes and zucchini, then wrap them up in a tea towel. Squeeze out as much liquid as you can.
02 - Grab a big bowl and toss in the flour, grated cheese, egg, olive oil, milk, and chopped parsley. Stir it all together.
03 - Preheat your greased waffle iron so it’s ready to go.
04 - Place 2 spoonfuls of the batter onto the waffle iron, add a slice of mozzarella on top, then put another layer of batter over it. Close the waffle maker and let them cook for 5-7 minutes.
05 - Serve your waffles while they’re nice and hot. If you’d like, pair them with some tomato sauce.
