Spiced molasses cookies (Print Version)

# Ingredients:

→ Dry mix

01 - 375 g of unbleached all-purpose flour
02 - 5 ml of baking soda
03 - 5 ml of baking powder
04 - 2.5 ml of ground ginger
05 - 2.5 ml of ground cinnamon
06 - A pinch of salt
07 - A pinch of ground cloves

→ Wet mix

08 - 115 g of unsalted butter, softened
09 - 160 g of brown sugar
10 - 125 ml of molasses
11 - 1 egg
12 - 30 ml of milk

# Instructions:

01 - Set your oven rack in the middle. Heat the oven at 180°C. Line two cookie sheets with parchment paper.
02 - Mix together the flour, baking powder, baking soda, salt, and spices in a bowl.
03 - Use an electric mixer to cream the butter, molasses, and brown sugar in another bowl. Toss in the egg and blend well. Slowly add the dry ingredients to the wet mixture while alternating with the milk, keeping it all on low speed.
04 - Scoop out dough balls with a 60 ml ice cream scoop, spacing 7 scoops evenly onto each prepared sheet, leaving about 6.5 cm in between.
05 - Bake one sheet at a time for roughly 18 minutes. Cool completely on a wire rack before serving.
