# Ingredients:

→ Base

01 - 2 corn tortillas, freshly cut into squares or strips
02 - 4-5 eggs, whisked lightly
03 - 3 tbsp of vegetable oil

→ Fresh Vegetables

04 - 1 small onion (white or yellow), chopped up
05 - 1 ripe medium tomato, diced into pieces
06 - 1 red bell pepper, chopped small
07 - 1 jalapeño, finely chopped

→ Cheese & Seasonings

08 - A half cup of shredded Monterrey Jack or pepperjack cheese
09 - Freshly ground black pepper and sea salt as needed

→ Optional Toppings

10 - Hot sauce that you enjoy
11 - Sliced fresh chili peppers
12 - Avocado slices
13 - Crushed red pepper flakes

# Instructions:

01 - Heat up a skillet and pour in the oil. Fry up the tortilla squares or strips until they're crispy and golden—stir them around now and then for about 4-5 minutes. Set them on paper towels and sprinkle salt while they're still hot.
02 - Using the same pan, toss in the chopped onion and peppers. Cook for about 5 minutes or until they smell amazing and are nice and tender.
03 - Add in the diced tomato first, then pour your whisked eggs over everything. Sprinkle a bit of salt and pepper on top, then gently mix it all together.
04 - Cook the egg mixture for 2-3 minutes, stirring sometimes, until it's creamy and just starting to set.
05 - Turn off the heat and mix in the crispy tortilla pieces and shredded cheese. Enhance your dish with avocado slices, a pinch of chili flakes, extra peppers, or hot sauce if you'd like.
