Miso Chicken Katsu Ramen (Print Version)

# Ingredients:

→ Ramen Base

01 - ¾ teaspoon crushed red pepper flakes
02 - 1 inch piece of fresh ginger, sliced thin
03 - 2 medium shallots, chopped finely
04 - 6 garlic cloves, chopped small or grated
05 - 2 thick-cut bacon strips, diced

→ Broth & Seasonings

06 - 1 tablespoon sesame oil, toasted
07 - 3 tablespoons chili paste (Gochujang works best)
08 - ¼ cup miso paste (white preferred)
09 - ¼ cup soy sauce, low sodium
10 - ¾ cup coconut milk or any milk you prefer
11 - 8 cups chicken broth, low sodium

→ Noodles & Vegetables

12 - 4 cups chopped baby spinach
13 - 4 blocks of ramen noodles

→ Chicken Katsu

14 - Kosher salt for seasoning
15 - 3 tablespoons sesame seeds
16 - 1 cup Panko breadcrumbs
17 - 4 thin chicken cutlets (or 2 chicken breasts cut horizontally)

→ Toppings

18 - Nori sheets, toasted
19 - Chili oil
20 - Hard or soft boiled eggs
21 - Sesame seeds
22 - Green onions

# Instructions:

01 - Place a large pot or Dutch oven on medium-high heat. Cook sliced bacon until it’s crispy, about 5 minutes. Toss in garlic, shallots, ginger, and pepper flakes, cooking for another 3 minutes while stirring for a caramelized mix.
02 - Pour in chicken broth, coconut milk, and soy sauce. Whisk in miso and chili paste to create a smooth base. Lower the heat to medium-low and simmer gently for 10 minutes.
03 - Combine the breadcrumbs and sesame seeds in a shallow dish. Sprinkle salt generously. Press the chicken cutlets firmly into the coating, making sure the breadcrumbs stick well.
04 - In a large skillet, heat oil over medium-high heat. Fry the chicken cutlets for about 3-4 minutes on each side until they’re crispy and golden. Move to a cutting board, slice into thin pieces, and sprinkle with salt.
05 - Stir spinach, noodles, and the toasted sesame oil into the broth. Let it sit off the heat for around 5 minutes, allowing the noodles to soften.
06 - Divide noodles into bowls, pour the hot broth over them, and top with sliced chicken. Add eggs, green onions, sesame seeds, and chili oil. Serve while it’s steamy!
