Use a vegetable peeler or mandoline to cut the cucumbers into thin slices. Toss them into a large pitcher.

Gently crush the mint leaves with the cucumber slices in the pitcher.

Juice about 1 and a half lemons (or limes) into the pitcher, saving the other half to slice for garnishing later.

Pour in the sparkling lemon water and give everything a good mix.

Pour the mix over ice and top with lime or lemon slices and a sprig of mint if you like.
