Heat up your oven to 375°F (190°C) and get a mini muffin pan greased up.

Mix together the cornmeal, white flour, sugar, salt, and baking powder in a big bowl.

In a second bowl, mix the eggs, buttermilk, honey, and melted butter. Add this wet mix to the dry one and stir gently until just blended.

Fill the prepared muffin slots about 3/4 full with the batter. Bake for 12–15 minutes. They’re done when they’re golden brown and a toothpick poked in the middle comes out clean.

In a separate small bowl, stir together the melted butter and honey. Use a brush to coat warm muffins with this mixture.
