Mini Honey Bites (Print Version)

# Ingredients:

01 - 1/4 cup white sugar
02 - 1 tablespoon rising agent (baking powder)
03 - 1/2 teaspoon fine salt
04 - 1 cup cornmeal or polenta
05 - 1 cup plain flour
06 - 2 medium eggs
07 - 1 cup tangy buttermilk
08 - 1/3 cup melted unsalted butter
09 - 3 tablespoons sweet honey

→ Sweet Honey Topping

10 - 2 tablespoons honey (liquid)
11 - 1/4 cup melted butter (unsalted)

# Instructions:

01 - Heat up your oven to 375°F (190°C) and get a mini muffin pan greased up.
02 - Mix together the cornmeal, white flour, sugar, salt, and baking powder in a big bowl.
03 - In a second bowl, mix the eggs, buttermilk, honey, and melted butter. Add this wet mix to the dry one and stir gently until just blended.
04 - Fill the prepared muffin slots about 3/4 full with the batter. Bake for 12–15 minutes. They’re done when they’re golden brown and a toothpick poked in the middle comes out clean.
05 - In a separate small bowl, stir together the melted butter and honey. Use a brush to coat warm muffins with this mixture.
06 - Serve fresh right away, whether as a snack, appetizer, or part of a meal.
