Small caramel cheesecakes (Print Version)

# Ingredients:

01 - 1 cup of crushed Graham crackers.
02 - 4 tablespoons of melted butter.
03 - 2 tablespoons of sugar for the crust.
04 - 1/4 cup of heavy cream.
05 - 1/4 cup of sugar for caramelizing.
06 - 8 ounces of cream cheese.
07 - 1/4 cup of sugar for the filling.
08 - 1 large egg.
09 - 1 teaspoon of vanilla extract.

# Instructions:

01 - Combine the crushed crackers, sugar, and butter. Divide the mix into the baking molds and bake at 325°F for 5-7 minutes.
02 - Mix the cream cheese and sugar together, then blend in the egg, vanilla extract, and heavy cream. Pour the mixture onto the pre-baked crusts.
03 - Bake for 15-18 minutes. Let the cheesecakes sit in the oven (turned off) for 10 minutes before moving them to the fridge to cool for 2 hours.
04 - Sprinkle the sugar over the tops and use a kitchen torch to caramelize until a golden crust forms.

# Notes:

01 - The middle of the cheesecakes should wobble just a little when they come out of the oven.
02 - For the best crunch, caramelize them right before serving.
