Chicken Salad Melt (Print Version)

# Ingredients:

01 - Two slices of medium bread.
02 - 3/4 cup cooked and shredded chicken.
03 - 1/4 cup diced red bell pepper.
04 - 2 tablespoons chopped red onion.
05 - 1 tablespoon of chipotle-flavored mayo.
06 - Juice from half a lime (roughly 1/2 tablespoon).
07 - 1 teaspoon of honey for sweetness.
08 - 1 or 2 slices of pepper jack cheese.
09 - Season lightly with a bit of salt and pepper.
10 - Optional add-ons: Fresh herbs like cilantro or parsley, diced green onions, or hot sauce for some kick.

# Instructions:

01 - Turn the oven on and set it to 400°F.
02 - Lay some parchment paper on your baking tray.
03 - Combine chicken with red onion and bell peppers. Stir in mayo, lime juice, and honey. Sprinkle a little salt and pepper.
04 - Lightly toast your bread slices. Spread the chicken salad on one slice. Lay the cheese on top.
05 - Bake for 6 to 8 minutes. You can broil for a minute for extra crispiness. Add any toppings you like before serving.
