Stir together the pesto, olive oil, and minced garlic in a small bowl. While doing this, preheat your oven to 200°C or get your pan warmed up over medium heat.

Spread the pesto mix on one side of each bread slice. Take four slices and layer on the chicken ham, followed by sliced mozzarella. Sprinkle the chopped sun-dried tomatoes evenly over the top.

Sprinkle a good amount of grated parmesan over all the layers. Place the other bread slices on top, with the pesto sides facing inward to lock in the flavors.

Cook the croque-monsieur on a hot pan for about 3 to 4 minutes per side, until golden and the cheese is nice and gooey. Alternatively, pop them in the oven for 10 minutes, letting the tops turn crispy and golden.

Serve your croque-monsieur warm, paired with fresh basil or a crunchy green salad. Optional: add a pesto sauce on the side for dipping.
