Marry Me Sausage Pasta (Print Version)

# Ingredients:

01 - 8 ounces of small ditalini pasta.
02 - 1-2 tablespoons of oil, such as avocado.
03 - 1/2 cup finely chopped sweet onions.
04 - 8 ounces ground mild Italian sausage.
05 - 2 garlic cloves, finely chopped.
06 - 1-1.5 tablespoons of thick tomato paste.
07 - Salt (Kosher) to taste.
08 - A pinch or more of black pepper.
09 - 1/2-3/4 cup of reduced-sodium chicken broth.
10 - 3/4-1 cup of rich heavy cream.
11 - 1/2 cup freshly grated parmesan.
12 - Optional: red chili flakes as topping.

# Instructions:

01 - Boil ditalini in salty water just until firm to the bite, then drain. Toss with oil lightly, set aside.
02 - Using medium-high heat, cook sausage until browned. Toss in garlic and onions, cooking till onions are soft and clear.
03 - Mix in tomato paste, stirring to caramelize for a couple of minutes. Sprinkle salt and pepper. Add chicken broth to deglaze the pan and reduce.
04 - Pour in cream, melt the grated parmesan, and stir on low heat till smooth.
05 - Toss cooked pasta into the sauce until everything is evenly coated. Sprinkle on chili flakes for garnish.

# Notes:

01 - Thin out sauce by adding more broth as needed.
02 - Don’t overcook the pasta—leave it chewy.
03 - Toast the tomato paste for bolder flavor.
