Mango Strawberry Cupcakes (Print Version)

# Ingredients:

→ Base of Cupcake

01 - 1 ¼ cups white caster sugar
02 - 3 tsp powder for baking
03 - ½ tsp salt (fine grain)
04 - 3 ½ cups regular-purpose flour
05 - ½ cup softened unsalted butter
06 - 1 ½ cups creamy whole milk
07 - 2 large-sized eggs
08 - ½ cup cooking oil (vegetable-based)
09 - 2 tbsp thick Greek yogurt (or sour cream)
10 - 2 tsp tequila (optional use)
11 - 1 tsp liquid vanilla extract

→ Flavor Additions

12 - Yellow gel food coloring (for mango section)
13 - Pink and red gel food coloring (for strawberry section)
14 - 1 tsp mango essence
15 - 1 tsp strawberry essence

→ Buttercream Frosting

16 - Strawberry flavor extract for topping
17 - Yellow gel food coloring for mango frosting
18 - 1 batch of buttercream (Swiss or American meringue)

# Instructions:

01 - Set your oven to 275°F (140°C) for fan ovens, or 320°F (160°C) for standard. Prep two muffin trays by adding liners.
02 - Grab a big mixing bowl, toss in the flour, sugar, salt, and baking powder. Add the butter last, giving it a mix until it looks like bread crumbs.
03 - In another bowl, combine the eggs, milk, yogurt, vanilla, and oil. If you're adding tequila, throw it in now too, and mix until smooth.
04 - Split the main batter into two equal parts. Dye one with red/pink food gel and stir in the strawberry flavor. The other half? Add yellow coloring and mango flavor and mix till colors are vibrant.
05 - Layer each cupcake liner with alternating scoops of strawberry and mango mix. Don’t go over two-thirds full.
06 - Pop them in the oven for 40 to 50 minutes until a skewer (or toothpick) comes out clean. Cool the cupcakes completely on a rack.
07 - Whip up the buttercream. Split it into two. Use pink/red dye and strawberry essence in one half, and yellow dye with mango extract in the other.
08 - Roll the tops of your baked cupcakes gently in water, followed by sugar. It’ll resemble margarita glasses!
09 - Use your piping bag and alternate between strawberry and mango swirls on each cupcake.
10 - Finish each treat with a lime slice and half a strawberry for a festive look.
