Peel the mangoes and slice them into even strips. Grate the lime zest.

Melt the sugar on low heat until it turns into golden caramel.

Cut out 5 rounds from the puff pastry. Pour the caramel into the molds, sprinkle with lime zest, arrange the mango strips, and drizzle some lime juice on top. Cover with the pastry rounds and poke holes with a fork.

Bake in the oven at 180°C for 25-30 minutes until the pastry is golden brown. Quickly remove from the molds.
