Mango Chili Dressing (Print Version)

# Ingredients:

→ Fruits & Juices

01 - Juice from two limes (about 1/4 cup total)
02 - 1 ripe mango, peeled, pit removed, and sliced into big chunks
03 - 1/4 cup of fresh orange juice, squeezed at home

→ Aromatics & Seasonings

04 - 1/2 teaspoon of ground cumin
05 - A pinch of salt, about half a teaspoon
06 - One garlic clove, left whole
07 - 2 tablespoons of runny honey
08 - 1/4 teaspoon of freshly ground black pepper

→ Fresh Add-Ins

09 - A tablespoon of finely diced medium-spicy chili, like jalapeño or Fresno
10 - 2 tablespoons of finely chopped cilantro

→ Oil

11 - 1/3 cup of quality extra virgin olive oil

# Instructions:

01 - Toss the mango, lime and orange juices, cumin, garlic, honey, and salt into a blender. Blend on medium power until the mixture turns smooth. Transfer it to a storage jar.
02 - Add the olive oil to the jar while you whisk or stir nonstop with a fork, pouring it in slowly so it combines well.
03 - Add in the chopped cilantro, black pepper, and chili. Give it a taste, and if it feels like it needs more salt, sprinkle a little extra.
04 - Store it in the fridge, where it’ll last about a week. Don’t forget to shake it before using!

01 - Great as a drizzle over salads or paired with chicken, shrimp, or grilled salmon
02 - Keeps in the fridge for up to 7 days
03 - Shake well before pouring
