Light crispy waffles (Print Version)

# Ingredients:

01 - 1 ml of salt
02 - 2 large eggs
03 - 250 ml of buttermilk
04 - 35 g of corn starch
05 - 40 g of brown sugar
06 - 2.5 ml of baking powder
07 - 60 ml of canola oil
08 - 150 g of all-purpose unbleached flour
09 - 1 ml of baking soda

# Instructions:

01 - In a bowl, combine flour, corn starch, salt, baking soda, and baking powder. Set it aside for later.
02 - In a separate bowl, beat the eggs and brown sugar for about 5 minutes. Keep mixing until it's pale, makes a ribbon, and triples in size. Slowly pour in the oil while whisking.
03 - Using a spatula, fold in the dry ingredients a bit at a time. Alternate with splashes of buttermilk. Stop as soon as it's a little lumpy. Let the batter rest for 10 minutes.
04 - Preheat your waffle maker. Pour about 250 ml of batter (enough for 2 waffles) onto the iron and close it, following the maker's instructions. Cook about 5 minutes or until golden. Keep warm after cooking.
05 - Keep going with the rest of the batter. Put the waffles on a plate and pair them with a strawberry dipping sauce for serving.
