In a bowl, combine flour, corn starch, salt, baking soda, and baking powder. Set it aside for later.

In a separate bowl, beat the eggs and brown sugar for about 5 minutes. Keep mixing until it's pale, makes a ribbon, and triples in size. Slowly pour in the oil while whisking.

Using a spatula, fold in the dry ingredients a bit at a time. Alternate with splashes of buttermilk. Stop as soon as it's a little lumpy. Let the batter rest for 10 minutes.

Preheat your waffle maker. Pour about 250 ml of batter (enough for 2 waffles) onto the iron and close it, following the maker's instructions. Cook about 5 minutes or until golden. Keep warm after cooking.

Keep going with the rest of the batter. Put the waffles on a plate and pair them with a strawberry dipping sauce for serving.
