Set your oven to preheat at 180°C.

Peel and slice up the carrots into rounds. Steam them or boil until you can easily stab a fork through them.

Finely chop up the onion and garlic.

Whisk the light cream, eggs, salt, pepper, and nutmeg together in a mixing bowl.

Combine your steamed carrots, onion, garlic, and the sauce you just made. Pour this mix into a baking dish. Top with grated cheese if you'd like.

Pop everything in the oven for 25 to 30 minutes.
