Lemon Salmon with Herbed Rice (Print Version)

# Ingredients:

→ Fish

01 - 4 fresh salmon fillets (each weighing about 150g)

→ Base

02 - 300g of long-grain or basmati rice

→ Seasoning

03 - 2 lemons (use both the juice and grated peel)
04 - 2 cloves of minced garlic
05 - 1 bunch of herbs (such as parsley and cilantro)
06 - 2 tablespoons of olive oil
07 - Salt and freshly ground pepper

# Instructions:

01 - Follow the cooking directions on the rice package until it's soft and ready to eat.
02 - Grate and squeeze the juice from one lemon. Stir the zest and juice into the cooked rice, toss in chopped fresh herbs, and keep it warm.
03 - Sprinkle salt, pepper, grated lemon peel, the juice from the second lemon, and minced garlic on the salmon fillets.
04 - Heat up the olive oil in a skillet and cook the fillets for 4 to 5 minutes per side over medium heat.
05 - Scoop the herbed rice onto plates, lay a salmon fillet on top, and garnish with slices of fresh lemon.

# Notes:

01 - You can prep this recipe ahead of time but wait to cook the salmon until right before serving.
02 - The rice can stay warm for about 30 minutes if needed.
