Wash the leeks after slicing them into 1 cm rounds. Boil in water for about 7-8 minutes, cool in ice water, then drain them well.

In a frying pan, cook the smoky bacon until crispy. Toss in the sliced onion and let it soften and color lightly.

Mix the leeks with the onion and bacon in the pan. Let the leftover water steam off.

Whisk the eggs, salt, and pepper. Stir in the milk and then add the leek and bacon mixture.

Pour the mixture into ramekins or an oven dish, sprinkle with gruyère, and bake at 200°C for 20-30 minutes.
