Parmesan Sausage Ditalini (Print Version)

# Ingredients:

→ Proteins & Base

01 - 1 tablespoon oil, olive preferred
02 - 1 lb Italian sausage, no casing
03 - 2 garlic cloves, finely chopped
04 - 1 small onion, diced

→ Liquids & Dairy

05 - 2 quarts chicken broth
06 - 1/2 cup cream, heavy
07 - 1 (14.5 oz) can chopped tomatoes

→ Pasta & Cheese

08 - 1/2 cup grated Parmesan
09 - 1 cup small ditalini noodles

→ Seasonings

10 - 1/2 teaspoon oregano, dried
11 - Fresh parsley chopped for topping
12 - Add salt and pepper to your taste
13 - 1/2 teaspoon basil, dried

# Instructions:

01 - Heat oil, toss sausage in, and stir as it cooks. Remove when browned.
02 - In the same pan, throw in onion and garlic. Fry until soft and fragrant.
03 - Pour in broth, tomatoes, herbs, and add the sausage back. Keep it on low heat to simmer.
04 - Drop the pasta in and boil it until it's still firm but cooked.
05 - Mix in Parmesan and cream till melted. Add parsley and adjust flavors as needed.

# Notes:

01 - You can use other small pasta shapes too.
02 - If preparing ahead, boil pasta separately.
03 - Suits both spicy and mild sausage varieties.
