Lentil Curry Delight (Print Version)

# Ingredients:

01 - 1 medium ginger, finely grated (around 2 tablespoons).
02 - 2 cloves of garlic, minced.
03 - 1 medium onion, diced.
04 - 1 tablespoon of olive oil.
05 - 1/2 teaspoon ground turmeric.
06 - 1 teaspoon of curry seasoning.
07 - 1/4 teaspoon of cayenne (optional for spice lovers).
08 - 1/4 teaspoon of black pepper.
09 - 1/2 teaspoon salt.
10 - 1 teaspoon of ground cumin.
11 - 1 can (14 ounces) diced tomatoes.
12 - 1 cup of coconut milk.
13 - 1 cup of rinsed green or brown lentils.
14 - 2 cups water or vegetable stock.
15 - Fresh lemon juice, for serving.
16 - Chopped cilantro, for garnish.
17 - Optional: red or yellow lentils (texture will be softer if used).

# Instructions:

01 - Turn on the "Sauté" function on the Instant Pot and heat up the olive oil. Toss in the diced onion and cook until it's soft and just starting to brown, about 5 minutes. Add the garlic and ginger next, stirring non-stop for a minute so they don't burn.
02 - Toss in the turmeric, cumin, salt, curry powder, black pepper, and cayenne (if using). Stir everything constantly for about a minute until the aroma of the spices fills the air.
03 - Pour in the canned tomatoes, the washed lentils, and your choice of water or vegetable stock. Mix it all together well.
04 - Lock the Instant Pot's lid, ensuring the valve is on "Sealing." Set it on "Pressure Cook" or "Manual" for 15 minutes on high. Once the time's up, let the pressure naturally release for 10 minutes, then release any remaining pressure manually.
05 - Carefully open the lid and mix in the coconut milk until well combined.
06 - Taste the curry and tweak the seasoning if necessary. Serve warm with a sprinkle of cilantro and a splash of fresh lemon juice on top.

01 - Lentil Choices: Green or brown lentils hold their shape nicely. Using red or yellow lentils might make the curry softer and creamier.
02 - No Instant Pot? You can make this on the stovetop! Adjust the cooking time based on your lentil type.
