Indian Lentil Curry (Print Version)

# Ingredients:

01 - 1 lime.
02 - 175 g red lentils.
03 - 2 onions.
04 - 2 medium carrots.
05 - 2 garlic cloves.
06 - 400 ml coconut milk.
07 - 2 tablespoons turmeric.
08 - 2 tablespoons curry powder.
09 - 400 g tomato pulp.
10 - Fresh cilantro.
11 - Olive oil.
12 - Salt.
13 - Pepper.

# Instructions:

01 - Let the lentils soak in a bowl of cold water and set them aside.
02 - Peel the carrots, garlic, and onions, then slice them up into thin pieces.
03 - Heat some oil in a pan over medium heat and toss in the vegetables. Stir them for a few minutes.
04 - Mix in the curry powder and turmeric, then season with some salt and pepper to your taste.
05 - Pour in the coconut milk and tomato pulp. Drain the lentils and add them to the pan. Let it simmer for about 40 minutes, adding water if it gets too thick.
06 - Right before serving, drizzle some lime juice and garnish with fresh cilantro sprigs.
