Warm the oven to 400°F and line your baking tray with parchment.

Stir sausage, thyme, breadcrumbs, cheese, and 1 egg until combined.

Blend the leftover egg with a tablespoon of water.

Unroll each pastry sheet and slice them into two long pieces.

Spread sausage mix down the center. One side gets a mustard layer, the other an egg wash.

Wrap pastry around filling, press seam to seal with egg wash, and place seam-side underneath.

Slice into 1.5-inch pieces and score the tops lightly.
