Whisk the eggs and sugar together. Stir in the milk and melted butter. Keep mixing until smooth.

Gradually add flour, about 1 cup (250 ml) at a time. Toss in the nutmeg and vanilla, and stir until the dough comes together nicely.

Lightly dust a flat surface with flour and roll out the dough. Use a cutter to shape the donuts.

Heat the shortening for frying and cook the donuts for 4-5 minutes on each side, or until they're a deep golden color.
