Stir the sugar and cinnamon together. In a large bowl, pour in lukewarm water and add the sugar mixture and yeast. Let it sit for about 5 minutes.

Combine the oil, egg, and salt in a cup. Pour this into the yeast mixture you prepared earlier.

Start by adding half of the flour to the wet mix and stir for 5-6 minutes. Keep adding flour until the dough pulls away cleanly from the bowl.

Place the dough in a greased bowl and cover it with plastic wrap. Allow it to rise until it's twice as big in a warm spot.

Roll the dough into beaver tail shapes. Make three slits in the center and heat oil to 175 °C. Fry both sides until golden brown.

Blend the cinnamon and sugar for the topping together.

Coat the warm pastries in the cinnamon-sugar mixture. Serve them hot, maybe with some homemade caramel on the side.
