Farmhouse Bean Soup (Print Version)

# Ingredients:

01 - 600g canned red beans.
02 - 2 onions.
03 - 125g bacon bits.
04 - 3 tablespoons olive oil.
05 - 4 tablespoons tomato paste.
06 - 1 can of peeled tomatoes.
07 - 70cl beef stock.
08 - Salt and pepper.
09 - 1 teaspoon Espelette pepper.
10 - 2 large fresh tomatoes.
11 - 1 small white onion.
12 - 150g pasta.

# Instructions:

01 - Drain the red beans using a strainer and rinse them in cold water. Peel and finely chop both onions. Heat the olive oil in a large pot, and sauté the bacon bits until they’re golden. Toss in the chopped onions and cook until they soften and turn light golden.
02 - In the same pot, add the peeled tomatoes, tomato paste, and beans. Pour in the beef stock and let the soup gently simmer. Season it with salt, pepper, and Espelette pepper for a bit of heat.
03 - Peel the large tomatoes, remove the seeds, and dice the flesh into small chunks. Finely chop the white onion. Mix the diced tomatoes and onion into the soup, cover the pot, and let it cook on low for about 20 minutes.
04 - Cook the pasta in salted water separately. Stir the cooked pasta into the soup right before serving.

# Notes:

01 - The pasta should be added just before you serve.
02 - This soup can be prepared ahead of time but don’t include the pasta until serving.
