Beef Dirty Rice Dish (Print Version)

# Ingredients:

01 - 1 green or red bell pepper, chopped up
02 - 2 garlic cloves, finely chopped
03 - 1 small onion, diced finely
04 - 2 celery stalks, chopped small
05 - 1 tablespoon olive oil
06 - 1 pound ground beef
07 - 1.5 cups uncooked long-grain white rice
08 - 3 cups chicken stock
09 - 1 teaspoon Cajun spice mix (adjust as desired)
10 - 1 teaspoon smoked paprika
11 - 1 teaspoon dried thyme
12 - 0.5 teaspoon black pepper, ground
13 - Optional: chopped green onions for topping

# Instructions:

01 - Warm up 1 tablespoon of olive oil in a wide skillet or Dutch oven on medium heat. Toss in 1 pound of ground beef and let it brown, breaking it into bits. It'll take 5–7 minutes. If there's any extra grease, drain it.
02 - Throw in the diced onion, bell pepper, and celery with the beef. Stir often while cooking for 3–5 minutes until they're soft. Add the chopped garlic and cook for one more minute so it smells nice.
03 - Pour the uncooked rice into the pan. Stir well to coat the rice in the beef and veggie mix, then cook for another 1–2 minutes to toast it lightly.
04 - Sprinkle in smoked paprika, dried thyme, Cajun seasoning, and ground black pepper. Stir everything together before adding 3 cups of chicken stock. Turn the heat up to medium-high and bring the mixture to a boil.
05 - Once boiling, turn the heat down to low. Cover with the lid and let it cook for 18–20 minutes, or until the rice absorbs all the liquid and is soft. Don’t remove the lid while it’s cooking! Take it off the heat, and let it sit covered for 5 minutes.
06 - Take off the lid and gently fluff the rice with a fork. Sprinkle chopped green onions on top if you'd like. Serve warm and enjoy.
