Grate both cheeses and slice bread about half an inch thick. Put your skillet on low heat.

Take 1 teaspoon of mayo and spread it on just one side of each bread piece.

Melt the butter in the skillet. Place one bread slice mayo-side facing down, stack the cheese on top, and cover with the second piece, mayo-side up.

Cover the pan and cook for a couple of minutes until the bottom turns a golden color.

Turn the sandwich over, cover again, and let it cook for another two minutes while the cheese melts and the bottom turns golden.

Slice the sandwich diagonally and eat right away when the cheese is still gooey.
