Ultimate Grilled Cheese (Print Version)

# Ingredients:

01 - Two slices of thick sourdough bread
02 - 1 tablespoon of unsalted butter
03 - 2 teaspoons of mayonnaise
04 - 3.5 ounces of freshly grated sharp cheddar cheese
05 - 1 ounce of freshly grated Gruyère cheese

# Instructions:

01 - Grate both cheeses and slice bread about half an inch thick. Put your skillet on low heat.
02 - Take 1 teaspoon of mayo and spread it on just one side of each bread piece.
03 - Melt the butter in the skillet. Place one bread slice mayo-side facing down, stack the cheese on top, and cover with the second piece, mayo-side up.
04 - Cover the pan and cook for a couple of minutes until the bottom turns a golden color.
05 - Turn the sandwich over, cover again, and let it cook for another two minutes while the cheese melts and the bottom turns golden.
06 - Slice the sandwich diagonally and eat right away when the cheese is still gooey.

# Notes:

01 - Freshly grated cheese melts better every time.
02 - Mayo makes the outside perfectly crisp.
03 - Cooking slow on low heat gets the cheese evenly gooey.
